Ingredients:
- ¾ cup butter
- 1 cup white sugar
- 1 tsp vanilla extract
- 1 egg
- ¼ cup molasses
- 2 ¼ cups all-purpose flour
- 1 tbsp cornstarch
- 2 tsp ginger
- 1 ½ tsp cinnamon
- 1 tsp nutmeg
- ¼ tsp salt
- 2 apples
Start by adding butter and sugar to a bowl, then mixing. Next, add your egg, vanilla extract, and mix again. Then, add molasses and mix. I didn’t have any molasses around the house so I used maple syrup instead (which also worked just fine). In a separate bowl add flour, cornstarch, ginger, cinnamon, nutmeg, and just a pinch of salt. Mix together what’s in the second bowl, then dump it into the first bowl with the wet ingredients and mix thoroughly until it’s a thick dough. Then, scoop your cookie dough and roll them into tiny balls. Next, the apples come to use. Cut them into thin slices and remove the seeds. Once you’ve flattened the balls of cookie dough onto your sheet pan, place the apple slices on top. Preheat the oven to 350°F, bake for 10 minutes, then cool!
