Gluten-Free Cookies

Background: Last week I explained how to make gluten-free brownies, and this week I will be showing you how to make gluten-free cookies. Recently my mother has found out she is celiac, which doesn’t allow her to process gluten correctly. Therefore my family had to work around this new situation in order to still enjoy the foods we love. This recipe is one of the best gluten-free cookie recipes out there.

Ingredients:

1 stick of butter

1 tablespoon milk

¾ cups brown sugar

¼ cup white sugar

1 egg

2 teaspoon vanilla extract

1 ⅓ gluten-free all purpose flour

¼ cup almond flour

1 teaspoon baking soda

½ teaspoon salt

1 cup chocolate chips

Sea salt sprinkle

Instructions:

  1. Whisk together gluten-free flour, almond flour, baking soda, and salt
  2. Melt and brown butter
  3. Add milk, brown sugar, and white sugar. Which until combined. Add eggs and vanilla and whisk until creamy
  4. Mix in dry ingredients until combined
  5. Add chocolate chips
  6. Let the bowl sit for 30 mins. Preheat oven to 350F
  7. Scoop into balls and lay them out on baking sheet a few inches apart
  8. Bake for 10-12 minutes, then let cool for 5 minutes
  9. Enjoy!
