Pumpkin cheesecake is a great way to put a spin on the Nation’s most loved dish, pumpkin pie. National Pumpkin Cheesecake day is coming up on October 21st, here is a recipe to kickstart the Fall season.
Ingredients needed:
- 2 pkg. (8 oz each) cream cheese, softened
- ½ cup canned pumpkin
- ½ cup sugar
- ½ tsp. vanilla extract
- ½ tsp. ground cinnamon
- 2 eggs
- 1 graham cracker pie crust
Steps:
- Preheat oven to 350 degrees F
- Mix the cream cheese, canned pumpkin, sugar and vanilla extract with an electric mixer on medium speed for 1 or 2 minutes or until blended.
- Add the eggs into the mixture and mix until combined
- Pour mixture into the pie crust
- Bake at 350 degrees F for 40 minutes or until the center is almost set.
- Let the cheesecake cool
- Refrigerate for 3 hours or overnight
- Garnish with toppings of your choice
- Enjoy!
