Cookie Ingredients:

  • 1 cup (226 grams) butter, softened
  • 1 ¾ cup granulated sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • ¾ cup baking cocoa
  • 1 tsp. baking powder
  • 3 cups flour
  • Any icing of your choice

Instructions:

  1. Mix the softened butter in a large bowl until a smooth and creamy consistency is achieved then add the granulated sugar and mix until sugary lumps are formed
  2. Add the eggs, vanilla extract, baking powder, and baking cocoa (mix until all the ingredients are incorporated)
  3. Now one cup at a time, add the flour, mixing between each addition (if the dough is sticky don’t be afraid to add more flour little by little, you should be able to pinch some between your fingers, and your fingers should come away mostly clean)
  4. Once the dough has reached the right consistency wrap the dough in plastic wrap and allow it to chill in the refrigerator for about an hour, or until it’s firm but still workable
  5. After the dough has chilled, preheat the oven to 350 degrees Fahrenheit (175 Celsius) and line your baking sheet with parchment paper
  6. On a lightly floured surface, roll out the dough (if the dough is still sticky lightly knead in a little more flour)
  7. Now roll the dough out about 1.4” thick, and cut out a gingerbread shape or use a cookie cutter
  8. Brush off any excess flour before you bake the cookies for about 10 minutes, or until they’re no longer shiny
  9. Transfer to a cooling rack to cool completely and use a paper towel to remove any excess grease.
  10. Bag your icing in an icing bag and start piping your skeleton design (see photo for inspiration) let the icing dry before you eat, enjoy!
