Puerto Rican SoFrito Recipe

This is a type of paste to dip and add to Puerto Rican meals for flavor. 

Also known as Salsa 

Facts:

  • Prep & Cook Time: 15 minutes 
  • Serves: 32 servings
  • Makes: 4 cups 

Ingredients Include: 

  • Kosher Salt 
  • 2 medium spanish onions 
  • 1 large red bell pepper
  • 4 ripe plum tomatoes 
  • 4 cubanelle peppers
  • 1 large bunch of cilantro 
  • 4 leaves of culantro 
  • 8 ajices dulces 
  • 18 medium cloves garlic 

Directions: 

Step 1:

  •  Cut the onions into large chunks 2 cups and cut the cubanelle peppers by steaming, seeding, and cut into large chunks

Step 2: 

  • Add the onions and cubanelle peppers in the food processor with a steel blade until finely chopped. 

Step 3:

  •  While the motor is running, add the seeded, coureded and roughly chopped bell pepper and the ripe plum tomatoes that need to be cored and cut into chunks. 

Step 4:

  •  Add the cilantro roughly chopped and the peeled garlic cloves, and the leaves of culantro (which is a stronger flavor of cilantro) and lastly the ajices dulces make sure they are steamed ahead of time 

Step 5:

  •  When adding the ingredients into the food processor make sure it’s one at a time feed tube until smoothly, add salt to one’s tastes. 

Step 6:

  •  Finally transfer to a container, put into the refrigerator for close to 3 days or may freeze it.
