Blueberry Muffins

This blueberry muffin is a sweet but tart muffin, with a very delicious cinnamon crumb topping that just melts in your mouth. 

Prep Time: 15 minutes

Cook Time: 25 minutes 

Total: 40 minutes

Servings: 8 

Ingredients: 

Batter: 

  1. ¾ cup of sugar
  2. 1 ½ cups of all-purpose flour
  3. 1 egg
  4. ⅓ cup of milk (or as necessary)
  5. ⅓ cup vegetable oil 
  6. ½ teaspoon salt
  7. 2 teaspoons of baking powder

Crumb Topping:

  1. ⅓ cup all-purpose flour
  2. ¼ cup butter (cubed)
  3. 1 1.2 teaspoons of cinnamon 
  4. ½ cup of white sugar 

Directions:

  1. Preheat the oven to 400 degrees, grease the pan or fill with cup linings
  2. Combine the flour, baking powder, sugar, and salt in a large bowl whisking them together
  3. Pour into the bowl the oil, add the milk as much as necessary, and the egg. Then pour into the flour mixture until well incorporated. Fold in blueberries 
  4. For the crumb, stir together the flour, sugar, cinnamon, and butter with a fork. 
  5. Take the batter, add it to the pan, fill to the top, and sprinkle the crumb on top 
  6. Bake in the oven for 20 -25 minutes or until the toothpick is cleaned
