Recipe: Strawberry Cheesecake Cups

Ingredients :

  • 1lb of fresh strawberries
  • ¼ cup of brown sugar
  • 1 tbsp lemon zest
  • 1 tbsp lemon juice
  • 1 sleeve graham crackers

Instructions : 

  1. Wash and dice strawberries into bite-sized pieces
  2. Add ¼ cup of brown sugar as well as tbsp of fresh lemon zest and lemon juice
  3. Give it a good mix and let sit for 15 minutes
  4. Crush one 1 sleeve of graham crackers in a sealed plastic bag with a rolling pin
  5. Then add the graham cracker crumbs to a large bowl and stir a ¼ tsp of ground cinnamon (optional)
  6. Next pour in a ¼ cup of melted butter and stir until it has a texture similar to wet sand
  7. In another bowl combine 8 oz of softened cream cheese with 1 cup of sweetened condensed milk and 1 tsp of vanilla extract
  8. Once the mixture is smooth take a small scoop of the cream cheese and pour it into the bottom of a drinking glass or small mixing jar
  9. Add a spoonful of graham cracker crumbs on top
  10. Then a good scoop of strawberries  
  11. Continue filling the cups in that order until the cup is filled to the top making sure the final layer is strawberries
  12. Chill for one hour before serving and enjoy!
