Peach Crisp With Oatmeal Crumble

Gooey, crunchy oatmeal peach cobbler that will be sweet and juicy peaches and tart flavor. 

Ingredients: 

Peach Filling: 

  • 4-pound ripe peaches, peeled, pitted, and sliced ½-inch wedge peaches
  • ¼ cup quick-cooking tapioca
  • ¾ cup sugar
  • 1 teaspoon almond extract
  • ¼ cup fresh squeezed lemon juice
  • 1 tablespoon lemon zest

Oatmeal Crumble Topping: 

  • 1 cup dry old-fashioned oats
  • ⅔ cup of all-purpose flour
  • 10 tablespoons butter, softened 
  • ½ teaspoon sea salt 
  • ½ cup chopped pecans or walnuts (optional) 
  • ¼ teaspoon fresh grated nutmeg 
  • ¾ cup brown sugar 

Instructions: 

Filling: 

  • In a large bowl, add slices of peaches, tapioca, lemon juice, lemon zest, sugar, and almond extract. Then combine them together by tossing them and letting them sit for 15 minutes until the tapioca softens. 

Oatmeal Crumble Topping: 

  • Preheat oven to 350 and butter a 3-quart ovenproof baking dish. 
  • In another bowl, add oats, flour, nutmeg, nuts, salt, and brown sugar, and combine thoroughly. 
  • Then get a fork or pastry blender, and incorporate the butter into the dry ingredients to the crumble consistency 
  • Add the peaches to the baking dish, and sprinkle the topping evenly on top of the peaches. Add the dish to the oven for 40-45 minutes 
  • Remove from the oven and let it cool down for 15 minutes. Add any ice cream or just eat the gooey, yummy peach crisp
