Tomato Basil Bisque

Prep time: 25 minutes 

Ingredients

  1. 1 ½ cups of milk 
  2. One tablespoon of olive oil
  3. One yellow onion diced 
  4. 1 medium carrot diced 
  5. 2 celery stalks diced
  6. One 28 oz can of tomatoes chopped 
  7. One teaspoon of salt
  8. ½ teaspoon of sugar
  9. ¼ teaspoon of pepper
  10. One 11 oz of tomato soup 
  11. 3 tablespoons of pesto

Instructions 

  1. Heat the olive oil on low heat in a big pan. Add the celery, carrots, and onion for 5 minutes 
  2. Then add the tomatoes, salt, sugar, and pepper and let it cook and simmer for 12 minutes 
  3. Turn the heat to low and get a blender and blend the entire contents of the stock pot until smooth
  4. Serve warm with a little bit of pesto if you like.
