Fall is the time of the year where people consume an ungodly amount of pumpkin spice and coffee. Coffee shops and bakeries alike add new seasonal items to their menu in hopes of reeling in the seasonal customers. This can sometimes get expensive, so many people skip out on the fall trends. However; some decided to make their own pumpkin and coffee dishes, and to those people baking isn’t even the hardest part. It’s finding the right recipe that really gives people trouble. 

If you are one of those people who wish to take part in the fall food trends, but just don’t seem to have the money to buy food/drinks every week, then here are 2 easy fall recipes you can make at home. 

Pumpkin Spice Latte: 

What you will need:

  • 2 cups milk
  • 2 tablespoons pumpkin puree
  • 1 tablespoon vanilla extract
  • 1 to 3 tablespoons sugar
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 cup of coffee
  • Whipped cream(optional)

Directions:

Step 1: Over medium heat add milk, pumpkin puree, and sugar to a saucepan

Step 2: Do not boil these ingredients, instead heat them until they are hot. 

Step 3: Once done heating, remove the saucepan from the stove, and whisk in the vanilla, pumpkin pie spice, and the coffee.

Step 4: Pour Latte into a cup, and add whipped cream if it is to your liking. 

Pumpkin Spice Muffins:

What you will need: 

  • 1 3/4 cups all purpose flour
  • 2 eggs
  • 1/2 cup dark brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon nutmeg
  • 1 15 ounce can pure pumpkin puree
  • 1/2 cup coconut oil, melted
  • 1 teaspoon vanilla extract.
  • 1 cup sugar

Directions:                                                                                                                       Step 1: Preheat oven to 375 degrees                                                                          Step 2: After measuring out all the dry ingredients add the flour, sugars, baking soda, salt, and spices in a medium bowl, then whisk together.               Step 3: In a separate bowl mix the wet ingredients together; the eggs, pumpkin puree, coconut oil, and vanilla extract.                                                     Step 4: Mix the wet and dry ingredients together, but be careful not to over mix.                                        

Step 5: Evenly distribute the muffin batter into a standard sized muffin pan, and make sure the holes of the pan have a paper lining.                            Step 6: Bake for 20-22 mins, and to make sure they are done, stick a fork or toothpick into the muffin and if it comes out clean it is ready.
