Gluten-Free Brownies

Background: Recently my mother has found out she is celiac, which doesn’t allow her to process gluten correctly. Therefore my family had to work around this new situation in order to still enjoy the foods we love – brownies, cake, pasta – without putting anyone at risk. This recipe is one of my family’s favorites, and you wouldn’t be able to tell it’s gluten-free.

Ingredients: 

1 ½ cups of granulated sugar

8 tablespoons unsalted butter

½ teaspoon salt

1 teaspoon gluten-free vanilla extract

¾ cups cocoa powder 

3 large eggs

¾ cups gluten-free all-purpose flour

1 teaspoon baking powder

1 cup chocolate chips

Instructions:

  1. Preheat oven to 350°F and grease 9” pan
  2. Melt the sugar, butter, and salt together and stir until combined
  3. Next, mix in the vanilla and cocoa powder, then add the eggs until mixture becomes shiny
  4. Mix in the flour, baking powder, and chocolate chips
  5. Pour batter into the greased baking pan
  6. Bake brownies for 30-35 minutes (use the toothpick test)
  7. Remove and let cool completely before cutting
  8. Enjoy!
