Chocolate-Chip Banana Bread

Ingredients: 

  • ½ cup butter (1 standard stick), softened 
  • ½ cup white sugar 
  • ½ cup brown sugar 
  • 2 eggs 
  • ¼ cup milk 
  • 1 tsp vanilla extract 
  • 2-4 ripe bananas 
  • 2 cups flour 
  • 1 tsp baking soda 
  • ½ tsp salt 
  • 2 tsp cinnamon 
  • ½ cup chocolate chips 

Directions: 

  • Preheat the oven to 350 degrees Fahrenheit. 
  • Line an 8 x 5 loaf pan with parchment paper. Let the excess paper hang over the sides. Grease paper lightly with nonstick cooking spray. 
  • Cream butter and sugar together until smooth. 
  • Add in the eggs one at a time. 
  • Add in ¼ milk and 1 tsp vanilla extract. 
    • *Note: make sure the milk and eggs are not too cold because they will alter the consistency of the butter. The easiest way to get them to room temperature is to heat the milk in the microwave for 5-10 seconds, and to run hot water over the egg. 
  • Mash 2-4 bananas in a small bowl and combine with the rest of the wet ingredients. Mix thoroughly and set aside.  
  • In a separate bowl, sift the flour and combine with the remaining dry ingredients. 
  • Add the dry ingredients into the wet about a quarter cup at a time. Mix until just combined. 
  • Fold in chocolate chips to taste. 
  • Pour the mixture into the parchment-lined loaf pan. Bake for 50-65 minutes at 350 degrees Fahrenheit. 
  • Cool for 10 minutes before removing the loaf from the pan – this will help it keep its shape.
