Ingredients for the bars’ crust:
- 1 cup of softened butter
- ½ cup white sugar
- 2 cups of all purpose flour
Ingredients for the lemon bars:
- 4 eggs
- 1 ½ cup of white sugar
- ¼ cup of flour
- 2 lemons, juiced
- Powdered sugar
Instructions:
- Preheat the oven to 350 degrees F
- Mix the softened butter, 2 cups of flour, and ½ cup of sugar in a medium mixing bowl until a dough like consistency is formed
- Press the crust into the bottom of an ungreased 9 by 13 inch pan
- Bake for about 15 minutes in the preheated oven or until it turns golden brown
- While the crust is in the oven, wisk the remaining 1 ½ cups of sugar and ¼ cup of flour, in a large mixing bowl.
- Wisk the lemon juice and eggs into the dry ingredients
- After the ingredients are mixed together pour over the crust and bake for 20 minutes or until the bars are firm
- Once the bars are cooled, cut them into squares and sprinkle powdered sugar on top
