Ingredients
- 2 1/2 to 3 pounds red skin potatoes (about 6 medium potatoes), diced
- 1 small yellow onion, chopped
- 1 red bell pepper, chopped
- 2 tablespoons unsalted butter, chopped
- 2 tablespoons olive oil
- 2 teaspoons kosher salt
- 1 teaspoon pepper
- 1 teaspoon garlic powder
- 1/4 teaspoon paprika
- Pinch of cayenne
Directions
- Preheat the oven to 450 degrees.
- Toss all ingredients together on a large sheet pan and spread into a single layer. Bake for 40-45 minutes, flipping twice. Sprinkle with more salt and pepper fresh from the oven and serve hot.
