Oreo Cheesecake

Ingredients:

  • 50 pcs. Oreo cookies, divided
  • ¼ cup melted butter
  • 3 cups cream cheese, softened
  • 1 ½ cups powdered sugar 
  • 1 ¼ cup heavy whipping cream

Directions:

  1. For the crust, combine melted butter and 25 oreo cookies in a food processor. Process until it starts to stick together.
  2. Press the mixture into a spring-form pan and about ½ inches up the sides. Set aside.
  3. In a medium bowl, combine ¼ cup cream. Microwave on high in 20-second intervals, stirring well each time, until melted and smooth. Set aside.
  4. In a large bowl, beat cream cheese with a hand mixer until smooth. Add powdered sugar and mix well.
  5. Mix in the remaining 1 cup of cream until incorporated, then beat on high-speed until you achieve stiff peaks.
  6. Reserve 5 oreo cookies for garnish and crush the remaining oreo cookies with a rolling pin. Stir into the cheesecake filling
  7. Spread into crust, cover, and refrigerate overnight. Enjoy!
